The Kayon Mountain Coffee Farm is a family-owned business that grows coffee on 300 hectares of rich volcanic soil. At such high altitude, the farmers rely on the shade of indigenous trees like the Acacia—which they also grow in a nursery on-site—to protect the coffee plants and to continue to fertilize the soil. The care taken in the cultivation makes for a delicate cup of coffee.
We’re tasting a sweet, floral cup in harmony with citrus notes and malic acidity. It’s a very elegant brew that shines in a pourover. Like a cup of spring in the dead of winter.
